I am leaning towards Parm and Romano... I tried the chedder route and ended up with an oily gu that I did not eat but ened up packing it around. I am going to swing by the market and getting some to sample... (i.e. put it in the sun on my deck under some clothes to simulate my pack.
I have planned out my route on the MST and that is why a I chose the route I did.. I have a buddy who hiked around there and is due to send me a water report... I have been hiking and the water sources were dry... makes life VERY interesting!

Romano is a very dry cheese that should take the heat well.
BTW, with your hike on the MST, plan your water carefully. I haven't done that hike (yet!) but understand that it is a really dry summertime hike...
