I'm assuming you meant that you have actual cayenne peppers from your
garden, or the market. I have dried sweet peppers, and they do just fine. I
cut them into 1-inch pieces, and dry at about 125-F until done.
Of course, you could just buy cayenne powder and carry it in a little
baggie. It's powerful stuff.
