My personal pick for the moment is the Canon A620.
Not the lightest (it's just under 12 oz with its four AA
batteries) but excellent image quality and reasonably
cheap (about $200.)
Batteries and battery life are a consideration for digicams.
For hiking, I think "standard" (AA or AAA) batteries make
more sense than proprietary Lithium or NiMH batteries.
The former can be obtained almost anywhere, while the
latter will require you to carry a charger. The A620 uses
four AAs and is very conservative in its use of power.
Don't be swayed by megapixel counts. A small digicam
will have a small sensor. If it has an outrageous megapixel
rating (say, 10 MP or more) then you can bank on
it also having very noisy images. The A620 represents
a nice balance on that score as well.
